Endocrinologist names vegetables that can replace potatoes in the diet
Anna Kuznetsova, an endocrinologist at the Vidnovskaya Clinical Hospital of the Moscow Region Ministry of Health, explained in an interview with RIA Novosti what can replace potatoes in the daily diet.
According to experts, beans, celery, sweet potatoes and Jerusalem artichoke are close to potatoes in terms of nutritional value and taste.
Sweet potatoes have "more slow-acting carbohydrates that don't raise blood sugar." According to doctors, sweet potatoes contain calcium, magnesium, vitamin B6, and vitamin A.
According to Anna Kuznetsova, beans can replace potatoes in first courses and vinaigrettes. Potatoes can also be replaced with celery root and Jerusalem artichoke.
